I hope everyone is staying warm amidst the unbearable cold weather in the Midwest (if that’s even possible)! One of my FAVORITE meals is pasta on a cold night. It is even better when you find a healthy recipe for one of the best meals (in my opinion).

If you read my previous post using Banza pasta (Banza Strawberry Almond Vinaigrette Salad), you know the massive nutritious elements the pasta has.

For those of you who missed it. Don’t worry, hang tight and I will answer your pressing question: what is so special about Banza? Well, let me tell you. It is made from chickpeas. Chickpeas are a superfood packed with protein, has four times the fiber, and half the net carbs in comparison to regular pasta.

It is gluten free, vegan, and certified non-GMO (YAHOOO).

Fresh Tomato, Spinach & Garlic Sauce over Banza Recipe:


Yield: 3 – 4 servings
Prep time: 5 Minutes
Total time: 20 Minutes


Banza Pasta | 1 box

Tomato Sauce | 1 can

Grape Tomatoes | approx. 15 tomatoes

Italian Seasoning | 2 tablespoons

Garlic | 2 cloves

Spinach |1 handful

Garlic Salt |to taste

Optional: top with parmesan or add cooked chicken


  1. Boil water and follow instructions on Banza box.
  2. Add tomato sauce, garlic, and italian season into a pan and let it simmer on low.
  3. Cut baby tomatoes in half.
  4. Once noodles are cooked and drained, add tomatoes and spinach to the sauce.
  5. Stir the sauce frequently for approximately 3-5 minutes or until the spinach and tomatoes are saturated.
  6. Mix noodles with sauce and ENJOY!

TIP: Cook Banza noodles for 7 minutes instead of 8. The noodles in this recipe were cooked 8 minutes and they began to crumble. 7 minutes is absolutely perfect!
