Hello! It’s been awhile since I have posted a recipe on here! Life has been crazy busy lately, but it is finally getting nicer outside!

This last week my family and I traveled to Palm Springs, California. We had an amazing time relaxing, hiking, eating good food, and enjoying each other’s company.

However, over the last couple days I have been looking over my intentions for 2019 and reflecting where I am in regards to my goals (you can read them on my post: My Intentions For 2019). I have worked so hard trying to accomplish all of my goals, however I feel like I have made the most strides in my goal of “don’t stress the small stuff.”

I truly believe that your mindset in life is what sets you apart from the rest. Let me repeat that, YOUR mindset sets you apart from the rest. If you have a negative mindset of life, you will be more likely to live a negative life. If you have a positive mindset, you have a higher chance of living a positive life.

It’s not always easy to be positive and frankly it is much easier to be negative in a tough situation. I challenge you to stay positive even when life throws the hardest things at you. You are not in control with what happens to you, but you are in control of how you react to situations. Remember that. 

Slow Cooker Teriyaki Chicken:

Yield: 4 – 5 servings
Prep time: 10 Minutes
Total time: 3 hours 10 Minutes

Ingredients

Large Boneless Skinless Chicken Breasts | 3

Veri Veri Teriyaki Sauce (Low Sodium) | 1 1/3 cups

Chicken Broth | 1 cup

Directions

  1. Add chicken breasts to the bottom of the slow cooker.
  2. Pour chicken broth over chicken breasts.
  3. Cook on high for 3-4 hours, or until chicken is fully cooked.
  4. Remove chicken and place on cutting board. Shred the chicken using two forks (it should shred easily once done).
  5. Drain chicken broth from slow cooker.
  6. Place shredded chicken back in the slow cooker and add Teriyaki Sauce. Stir so that chicken is combined evenly with the sauce. Serve on sandwiches, over salads, in quesadillas, lettuce wraps, and more!

My favorite way to eat this meal is over rice and broccoli (as pictured). Simple and EASY recipe!
