I’m so excited to be back!
Over the last couple weeks, I have worked on redesigning the website and creating a new logo (see below)!
As I have stated in my post My Intentions For 2019, I explained that one of my intentions for 2019 was to communicate openly and let others know what I am feeling. Well, this semester has brought more change to my life than I intended and I am nothing but excited for the future.
For the first time in over a year, I feel like I have my mental health in a stable and extremely healthy place. YAY! Honestly, I cannot tell you how much of a positive difference this has been in my life. I stress to find what works for you and talk to someone that can help.
On another note, I am EXTREMELY excited to say that I have CHANGED my major from Elementary Education to Communication & Journalism with an emphasis in Advertising/PR. This is a perfect fit for me and I can’t wait to see what the future has in store!
But my mouth is watering about this amazing new HEALTHY recipe on Balance Sweat & Cheers!
Balance Sweat & Cheers: Healthy Cinnamon Swirl Banana Bread (Gluten Free, Dairy Free)
Yield: 6 servings
Prep time: 15 minutes
Total time: 55 minutes
Gluten Free Flour | 1 3/4 cups
Salt | 1/2 teaspoon
Baking Soda | 1/2 teaspoon
Cinnamon | 2 teaspoons
Eggs | 2
Mashed Ripe Bananas | 3
Coconut Oil (room temperature)|1/4 cup
Almond Milk | 1/2 cup
Vanilla| 1 teaspoon
Cinnamon Swirl Mixture: 1/4 cup sugar/ 2 teaspoon cinnamon
Preheat oven to 350°F. Grease pan to ensure loaf does not stick.
- Combine dry ingredients in a large mixing bowl.
- In a separate bowl, combine wet ingredients.
- Add wet ingredients to dry ingredients and stir until combined.
- In a small bowl, combine the cinnamon swirl ingredients.
Add half of the batter to loaf pan. Sprinkle cinnamon swirl mixture across batter.
- Add the rest of the batter on top of the cinnamon swirl mixture.
- Bake for 35-40 minutes.
- Let cool and EAT!
